For Fran, the nomination is not just an award, but a boost. ‘I enjoy my work, but it's still nice to hear that we're doing well. A visit to Dunas is not only a culinary experience, it is also a lesson in serenity. ‘We often hear from guests how quiet it is in our kitchen. They find that surprising. But for me, it's natural. That calmness allows for focus.’ Fran consciously chooses structure and calmness in her team, something that is immediately visible in the open kitchen. It creates a team spirit and simply looks professional.’ She also emphasises the protective aspect of good workwear: it is functional, safe and sets the tone for the atmosphere in the kitchen.

Fran prefers light, loose-fitting chef's jackets that allow freedom of movement – something that is essential during long shifts. ‘I like to change styles from time to time. But what always remains important is that the fabric is not too thick and that it is comfortable. No rush, but ambition

Although Fran does not have a big goal on the horizon, her ambition is clearly evident in the way she approaches her work. ‘For now, we mainly want to grow as a team and work on the details. That is our focus at the moment. The bigger dreams will come later.’ What drives her every day? Satisfied guests. ‘When people are happy after their meal, you know it was worth it.’
